Getting there

The Fort House is located in the heart of the historic UNESCO heritage site of Galle Fort, Galle on the beautiful South Coast of Sri Lanka, an area famous for its stunning natural beaches.

The house was built at the start of the 19th Century for a Dutch merchant and his wife. Lovingly restored, the 200yr old house, with an eclectic mix of traditional features and modern furnishings, results in a comfortable family retreat.

The original site of the fort was colonised by the early Portuguese settlers and tradesmen, but then later taken by the Dutch who built the Fort to defend their interests. Later the Fort was sold to the British for one guinea, as a result the fort is a fascinating blend of old colonial styles, predominantly Dutch.

Hygiene tips for traveling

Fruit that you peel to eat is safe, for example citrus fruit, bananas, pineapples, papayas and mangos.

When travelling to many countries, special precautions should be taken to avoid sickness from microorganisms in food and especially water. Many countries still fertilize with human excrement, making it important to follow a few tips to avoid getting sick.

1. Order your drinks without ice, if you are unsure that the ice is germ-free.
2. Drink only industrially bottled beverages. “Open” or unsealed bottles could be filled from a contaminated source.
3. Order your food well-cooked. Avoid raw or slightly cooked food, seafood, mayonnaise, ice cream, butter, etc.
4. Avoid eating food from street vendors.
5. Only eat fruits, raw vegetables, or salads if they were washed with germ-free water. Otherwise, you can wash them yourself with disinfected water.
6. Avoid raw milk. Pasteurized milk is safe to drink.
7. Fruit juices with high sugar content are an ideal medium for bacteria to grow. Only drink fruit juices if the fruit, blender, and anyone’s hands in contact were hygienically cleaned.
8. Fresh hot coffee and tea are safe beverages. Beer and wine are also typically safe. Note: Alcoholic beverages do not disinfect bacteria already in the stomach.
9. Brush your teeth with germ-free water. Even a small sip of contaminated water can cause diarrhoea.
10. Always use germ-free water when taking medicines. Diarrhea is not only uncomfortable; it could also affect the impact of the medicine (i. e. tablets).
11. Don’t bathe in tropical surface water.
12. Wash your hands regularly, especially after using the toilet and before contact with food.
13. Always use clean towels.

Guests also are required to follow the rules and display a sincere attitude. However, you do not have to be too stiff. From ancient times, Japanese temples and shrines have a history of accepting many people so that they could lead a happier life. If you respect the religions of others, whether Buddhist or not, you can stay at a shukubo regardless of your beliefs.

The morning service lasts for about half an hour from 6:30. As they offer a zazen experience, it is very interesting. You go to the stone-paved main hall with a cushion and sit there for zazen for about 10 minutes. All you have to do is sit still, so anyone can do it. It is not rigid in form either. They will teach you the ABCs of zazen. For me, it was really refreshing to sit quietly in the hall in the cool morning.

This is a women-only shukubo. You are free to participate in the services and the sermon (about half an hour). It is also famous for the scenic beauty of its autumn leaves. If you are alone, you may have to share a room with someone else in the busy season. Depending on the date, they do not conduct morning services, sermons or zazen. If you wish to participate in such events, it is recommended that you check beforehand.

Each Fortnite on a Saturday we receive shipment of fresh vegetables and herbs air-flown direct from our farm in Phulbari, Nepal. . Thanks to the rainy season, we are having a splendid variety of vegetables that will keep the creative cooks and their families well fed.

Many of our customers and friends are just discovering the bite of the rare and bitter Catalonia chicory. Tossed with a vinaigrette dressing or lemon juice and olive oil combination, it somehow loses its knee-jerking bitterness and emerges as a salad of character when matched with cut fruit, walnut or pine nut, hard-boiled egg and salted anchovies. There are definitely some converts out there. Try it!

With Organic Himalaya we are revolutionizing your salad bowl with leafy green endive, NZ spinach and lamb’s lettuce as robust greens. Definitely, not your garden variety of mesclun, baby spinach and rocket anymore.

However, seasonal is the key word with the produce of Phulbari farm and we are about to embrace the promises of voluptuous summer crops blessed by the monsoon clouds.

For this Saturday, we will be having mustard spinach (rayo sag in Nepali), eggplant, green beans, cauliflower, red beet, green corn, capsicum, pickling cucumber, zucchini and bitter gourd. Add to these, the reliable carrot, potato, tomato, red onion and garlic.
We anticipate fragrant basil, rosemary and curly parsley, and ripe peach and plum if they survive the bumpy journey over the muddy country road and the plane ride over the Himalayan mountain range.

Let us not miss out on the bottled jams/jellies and condiments that are prepared in the farm. We will unveil carrot jam, something I have not had the pleasure of.
We still have some few more bottles of the exclusive rhododendron jelly, ginger jam, tomato jam, plum jam and the Golden Himalayan raspberry jelly. Finally, there is the debut of the Bael jam, jelly and syrup made from the sweet ripe fruit of the Bael tree (also known as stone or wood apple), an unknown to some but a hit with the Nepali folks. Come and have a taste.

Finding myself as the green groceress has its moments of great anxiety and learning. Recipes and suggestions fly in all directions and some end up on the table as rewarding servings. What to do with the surplus quantities of tomato and carrot? Parcel some kilograms to friends with a brief - create something. And with that, we have had some jars of extraordinary tomato ketchup, sun dried tomato in olive oil, small cucumbers in a Nonya achar pickle juice, carrot cake and more surprises coming up. All these will find their way into some lucky bidder's pantry. The brightest moment is when Lauying suggested feeding the spoiled greens and fruit to the cuddly ponies from the Association of Disabled Riders. Brilliant, I can see some grinning faces coming up.

Governments around the world are imposing restrictions on the contents of cabin baggage in response to specific security threats and intelligence.
For the most part, these restrictions ban the carriage of any liquids, fluids and/or gels in cabin baggage. This includes drinks of any type, toiletries (toothpaste, shower gels, shampoos and perfumes), pre-purchased duty free liquid products (alcohol and perfume) and contact lens solution.
In addition, security screening procedures are being tightened at airports around the world.
Singapore Airlines provides the following GENERAL ADVICE to customers:
• Be alert to developments. Stay in touch with the news and check our website – www.singaporeair.com - and other official sources for changes.
• Pack hand luggage as lightly as possible. Keep it simple.
• Do not pack any fluids, gels or toiletries in hand luggage on flights to countries where they are prohibited, especially if you have an onward connection.
• Try to pack toiletries, contact lens solutions and other liquids or gels in your checked baggage, wherever you are traveling, as more countries may extend the restrictions with little or no notice.
• Get to the airport early.
• When returning from your destination, know the new hand luggage restrictions and pack anything else not essential: especially fluids and gels.
• If traveling with medicines (especially in gel, cream or liquid form), make sure they are properly labeled and you are carrying copies of your prescriptions or certifications.
• Wear light, comfortable shoes that can be easily removed for security checks. You can expect to be asked to remove your shoes, belt and any jewelry while proceeding through the security screening point.
• Be patient and co-operate with instructions from security staff. Understand everyone is in the same position, and these checks are being done for a real reason. It will make the travel experience a lot more comfortable if you relax and be patient during the screening process.
• Do not joke with security staff about the contents of your baggage and don't take out your frustrations on check-in or security staff or air crews.
• Do not buy duty free alcohol or perfumes prior to departure, or in flight, to countries where cabin baggage restrictions now apply - buy at shops on arrival. Major airports have duty free retailers for arriving customers.

NEW CABIN BAGGAGE ARRANGEMENTS: NOTICE TO CUSTOMERS TRAVELLING TO THE UNITED KINGDOM

Customers are advised that the UK authorities have revised their requirements for cabin baggage, and new conditions now apply for the carriage of items beyond the security screening point as follows:
Each customer may carry ONE item of cabin baggage measuring no more than 45cm x 35cm x 16cm. Other items (such as ladies handbags or laptop computers) may be carried within the single item of cabin baggage.
All liquids of any type are prohibited through the airport security search point, with the exception of the following:
• Prescription medicines in liquid form sufficient and essential for the flight, as long as verified authentic;
• Baby milk and liquid baby food (the contents of each jar must be tasted by the accompanying passenger)
Prohibited “liquids” includes gels, pastes, liquid/solid mixtures and the contents of pressurized containers (for example, toothpaste, hair gel, drinks, soups, syrups, perfumes, aerosols etc.)
To help their progress through search points, customers are asked not to include items capable of containing liquids (e.g. bottles, flasks, tubes, cans, plastic containers etc.) in cabin baggage.
All laptops and large electrical items (e.g. large hairdryer) must be removed from the bag and placed in a tray so that such items neither obscure nor are obscured by the bag.
Pushchairs and walking aids are permitted but must be x-ray screened. Wheelchairs are permitted but must be thoroughly searched.
The transfer facilities at Heathrow and Manchester Airports have re-opened; customers can now through check-in their baggage to their final destination. However, customers should be alert to any announcements on arrival about transfers.
AT LONDON HEATHROW AIRPORT, airside transfer will be available to customers with only one cabin bag and provided the contents meet the restrictions stated. If the requirements are not met, customers will be required to clear Customs and Immigration and proceed to their airline check-in counters.
AT MANCHESTER AIRPORT, transfer customers will still need to clear Immigration upon arrival and re-check-in for their connecting flights; customers are allowed only one cabin bag.

CABIN BAGGAGE RESTRICTIONS ON ALL FLIGHTS FROM THE PHILIPPINES

Singapore Airlines has been requested by the Philippines authorities to advise all customers travelling on flights from the Philippines that restrictions have been imposed with immediate effect and until further notice, which prevent the carriage of any fluid or gel substances in cabin baggage.
All such items will be required to be checked in.
These rules will apply to customers who have connecting or onward flights beyond their point of arrival on Singapore Airlines or SilkAir flights.

NOTICE TO CUSTOMERS TRAVELLING WITHIN OR FROM INDIA

Singapore Airlines has been advised of new, stringent security measures implemented by the Aviation Security Commissioner of India, for all flights in and from Indian Airports, with effect 12 August 2006 and until further notice.
Each customer is only permitted one cabin bag and must observe the following restrictions on cabin baggage and items taken beyond the airport security search points at airports in India.
Customers may not carry any liquids or gels past security screening points at airports except:
• Baby formula or breast milk if a small child or infant is traveling;
• Prescription medicines bearing the name that matches that of the passenger’s ticket;
• Insulin and other essential non-prescription medicines
No liquids or gels apart from those listed above can be taken on board the aircraft. This ban covers all drinks and toiletries, including alcohol and perfumes purchased from an airport duty free shop.
Beverages, shampoo, suntan lotions, creams, toothpaste, hair gel, cologne, perfumes and other items of a similar consistency are not permitted in the cabin. These items must be carried in the checked baggage.
All footwear must be x-ray screened, except for people with disabilities, in which case the footwear must be subject to special screening. If you are wearing a belt and/or jewelry, you will be asked to remove it for security screening.
Customers are asked to allow extra time for check-in, and to ensure that items that are not permitted in the list above are placed in their hold baggage to be checked in.
Customers continuing their travel and connecting to onward flights in or from India will also be required to observe these requirements, and will be subject to similar restrictions on hand carry items.
Customers are advised to plan accordingly for any in-flight duty-free purchases.

Singapore Airlines has been advised by the Canadian aviation security authorities to advise all customers travelling on flights to and from Canada (from the last point of departure before entry to Canada en route) that restrictions have been imposed with immediate effect and until further notice, which prevent the carriage of any fluid or gel substances in cabin baggage.
All such items will be required to be checked in.
The only exceptions are required prescription medicines and infant formula/milk.

UPDATE FOR TRAVELLERS TO AND FROM THE UK
11 August 2006

The following information is new and IN ADDITION TO information about cabin baggage restrictions detailed below:
For customers arriving into LONDON HEATHROW on a Singapore Airlines flight and connecting to any other destination: checked-in bags will be transferred to their onward airline. However, transfer customers must clear immigration at London Heathrow Airport, check-in their hand baggage with their onward airline then clear outbound security screening. Unless otherwise advised on arrival, there is no need to collect bags checked in at the commencement of the journey.

For customers arriving into MANCHESTER on a Singapore Airlines flight and connecting to any other destination: customers will be required to clear UK immigration and customs, collect their checked baggage and proceed to check-in for their onward flights, where all luggage (including cabin baggage) must be checked in again. From here, customers can proceed to security screening.
For customers DEPARTING FROM airports in the UK: please note that Singapore Airlines has been advised that UK police have restricted access to the Airport terminal buildings to passengers only until further notice. No friends or relatives will be permitted inside the terminal buildings until further notice.

URGENT ADVICE FOR TRAVELLERS FROM AIRPORTS IN THE UNITED KINGDOM

Travellers from airports in the UK are advised that the UK Department for Transport has advised that immediate restrictions will be placed on the carriage of handluggage on all flights from UK airports until further notice.
Accordingly, all customers on Singapore Airlines flights from London Heathrow and Manchester on 10 August 2006, and until further notice, must observe the following restrictions in items taken beyond the airport security search points:
In a single (ideally transparent) plastic carrier bag, only the following items:
• Pocket-size wallets and pocket-size purses plus contents (for example money, credit cards, identity cards etc (not handbags)
• Travel documents essential for the journey (for example passports and travel tickets)
• Prescription medicines and medical items sufficient and essential for the flight (eg, diabetic kit), except in liquid form unless verified as authentic
• Spectacles and sunglasses, without cases
• Contact lens holders, without bottles of solution
• For those travelling with an infant: baby food, milk (the contents of each bottle must be tasted by the accompanying passenger) and sanitary items sufficient and essential for the flight (nappies, wipes, creams and nappy disposal bags)
• Female sanitary items sufficient and essential for the flight, if unboxed (eg tampons, pads, towels and wipes)
• Tissues (unboxed) and/or handkerchiefs
• Keys (but no electrical key fobs). All passengers must be hand searched, and their footwear and all the items they are carrying must be X-ray screened.
Nothing may be carried in pockets. No liquids of any sort will be permitted.
Pushchairs and walking aids must be X-ray screened, and only airport-provided wheelchairs may pass through the screening point.
Singapore Airlines has been told to expect significant delays at airports. We apologise in advance if flights are delayed because of the implementation of these new requirements, which follow a security advice from the UK authorities.
Customers are asked to allow plenty of extra time for check-in, and to ensure that, other than the few permitted items listed above, all their belongings are placed in their hold baggage and checked in.
This advice will be updated as information is provided by the UK authorities.

Well-heeled, experienced travelers who have seen everything -- high-end hotels, high-end cruises and high-end spas -- are flocking to a new tourism segment: the high-end country.

	DESTINATIONS See high-end places to visit in developing countries.

Across the globe, a handful of developing nations, including Namibia, Botswana and the Seychelles, are subverting the traditional tourism model. Rather than allowing themselves to be pioneered by the budget backpacker crowd, only later to develop the infrastructure for big hotels, these nations are starting in the opposite direction. They're first wooing that minuscule slice of affluent travelers who will pay massive premiums for fancy digs far removed from the travel riffraff.

Dubbed "high value, low volume" tourism, the theory is to maximize the money derived from a small group of big spenders. In doing so, these countries hope not only to avoid damaging their natural and cultural attractions, but also aim to hang on longer to that exclusive cachet that will keep fickle luxury travelers returning for many years.

The most visible and oft-cited example is the kingdom of Bhutan, the once hermetic Buddhist country whose citizens gained access to television only a few years ago. Fearing a flood of $15-a-day trekkers like those who flock to nearby Nepal, the country established a no-exceptions $200-a-day minimum fee for all visitors, regardless of whether they are sleeping in a tent or at a top hotel. Now, this tiny country sandwiched between India and Tibet is a darling of luxury travel circles. It recently attracted Amanresorts, the super-luxury hotel chain, which is in the process of building five Aman resorts that will be scattered across the nation. The daily rate (including meals, fees and services): about $1,100. (Even at that price, there are no television sets or phones in the rooms, though iPods are provided upon request.)

In Botswana, a landlocked country bordered by Zimbabwe and South Africa, among other nations, the government leases its prime wildlife-viewing areas to a handful of small lodges that offer top-drawer service at high prices. Vumbura Plains, a camp that opened this year, includes private plunge pools with each of its rooms. In Namibia, an up-and-coming travel destination in southwestern Africa known for its stark desert landscapes, a $1,000-per-night resort opened last year. And in the Seychelles, a string of Indian Ocean islands off East Africa, the only "camp" on its North Island has rooms that run over $3,000 a night.

Luxury travel in developing countries isn't without controversy. To some, it is unseemly to build $1,000-a-night resorts in parts of the world where many people live in poverty.

High prices don't always ensure a flawless vacation. In April of this year, Chantal Prunier, a retired real-estate executive in Los Angeles, paid several thousands of dollars for a trip to Bhutan that she says included middling food, medium-grade bathroom facilities and in one case, limited electricity. Still, Ms. Prunier raves about the trip, which was organized by San Francisco-based Geographic Expeditions. "The countryside and people are beautiful," she says. "It is one of the most exotic places in the world."

In Botswana, the country's exclusivity strategy was inspired, some travel experts say, by the small, luxury camps that first popped up in South Africa. The government limits the number of visitors to its wilderness areas. Colin Bell, founder of Wilderness Safaris, the largest operator in Botswana, says one private reserve of 275,000 acres is allowed a maximum of 52 visitors at any one time. Mr. Bell says that his firm pays $300,000 a year plus over 20% of the lodge's profits to the local community for exclusive use of another safari area.

In Botswana's top-flight camps, the rooms are more like compounds, including a luxury tent, deck, indoor and outdoor showers and what's called a sala, a separate covered deck furnished with day beds for outdoor game viewing.

Room prices for Botswana are 20% higher than comparable camps in East Africa, but that doesn't seem to be scaring off customers. Mr. Bell says some of his camps are running at 90% occupancy. "Many of the camps are showing limited availability for April, May, June of next year," adds Ryan Hilton, a Sarasota, Fla.-based agent specializing in luxury safaris. "There's no shortage of money and travelers prepared to pay."

Many say Namibia appears to be moving toward a high-end, low-volume strategy similar to Botswana's. In Namibia, the new Little Ongava camp's three thatched rooms are set amid 74,000 acres.

It is unclear how long the countries will pursue the exclusivity strategy, however, especially when faced with increasing demand. Travel veterans point to Costa Rica and the Galapagos as examples of countries that began pursuing such policies only to fall off the wagon, tempted by the influx of dollars that bigger numbers bring. Richard Butler, professor of International Tourism at the University of Strathclyde in Glasgow, notes that such policies are easier to pursue if the appeal of a destination is naturally limited for other reasons, like the Caribbean island of Dominica, which uses its off-the-beaten-path appeal to compensate for a lack of white sand beaches. Already, the Seychelles, while still regarded as high-end, now boast a number of big hotel developments.

In the meantime, some travelers are willing to pay for an experience that is a touch more exotic. Jules Rose, a retired supermarket executive in Sarasota, Fla., says he booked his Botswana safari 10 months in advance and paid "at least" a 15% to 20% premium more than he did for a safari in Kenya. In exchange, Mr. Rose says he got a much more intimate view of the animals and their lives, as opposed to "six to seven Land Rovers in one spot in any given time." "It's like everything in life," he says. "You pay for what you get."
